Whole pork belly, braised with top-shelf Shaoxing wine, 2 kinds of soy sauce and yellow rock sugar. Shaoxing helps to cut the fattiness of the pork belly, while the slow caramelization of the rock sugar allows the soy to penetrate the meat before thickening it into the eventual sauce. Equal parts fat and lean meat, this melt in your mouth dish will have you going back for seconds.
