Definition of a fisherman: A jerk on one end of a line waiting for a jerk on the other end. Ok fine, Jerk is a method of cooking that involves marinating meats in an aromatic blend of spices (pimento, cinnamon, nutmeg...etc).

Usually, it also comes with fiery habaneros; for a moment, we considered using the Carolina reaper growing in our backyard, but wisely decided against it. For now, we've kept the spice level down by switching in mild red chillis and adding spring onions to mimic the oomph. That said, if you're feeling up to the challenge, feel free to add in more chillis. You won't regret it.
