Creamy soups don't have to be complex or require a ton of cream. All you need is a great tasting vegetable, a blender, and a little bit of patience with the oven. Red peppers are one of our favourite veggies for this, and slow roasting them ensures that the natural sugars have time to develop while excess liquid is removed resulting in a concentrated burst of flavor (think dry aging, but for vegetables).

Pop all these in a blender with a bit of water/stock and be impressed by the gourmet quality soup you've just made.
