Our go-to dish when we crave a curry, it goes well with naan, rice, prata, even chips (man do we miss those pub days)! Alas sometimes our body doesn't agree with all that butter and dairy. Thankfully we've found a slight work-around, one that uses freshly ground cashew butter as a substitute

PS: We've kept this curry slightly chunkier than the traditional, letting the tomatoes, onions and herbs really shine. Another twist: stirring in some wilted spinach not only gives it a color pop, but also makes it a nicely balanced meal
