Most places have ice-cream trucks, but in Japan and Korea, they have sweet potato trucks! There's no better handwarmer in cold weather than a piping hot sweet potato. Slow roasted to bring out the natural sugars, we blend a mix of yellow Japanese sweet potatoes (rich, complex and gummy) with purple sweet potatoes (sweet and vibrant). The result: a paste with layered levels of sweetness and earthy potato flavor.

PS: we almost forgot the slowly simmered organic agave candied chestnuts...well that's just icing on top of a already amazing cake (erm, oatbowl).

Japanese Sweet Potato: The higher starch and lower moisture content give this variant an uber concentrated nutty flavor. Gummy at the start, the sugars get released slowly as it stays in your mouth resulting in a more textured and layered sweetness when paired with the purple sweet potato

Purple Sweet Potato: As vibrant in color as in taste, we love adding this potato as a compliment to the milder taro. Full of anthocyanin pigments (the same ones you find in blueberries), it is also a great way to help boost your anti-oxidant intake

Chestnuts: Slow simmered and soaked in an organic agave syrup, these candied chestnuts help to accentuate the nutty flavors of the Japanese sweet potato while also introducing a burst of sweetness with every bite

Walnuts: If the adage of "you are what you eat" has any truth, then walnuts have to be the ultimate brain food. Rich in omega-3 fat and polyphenols, walnuts are also great for both the heart and reducing inflammation.
