We love animals, so when it comes to choosing which chickens to eat, we pick the badly behaved ones...the jerks (hehe sorry for the fowl language ). Ok fine, Jerk is a method of cooking that involves marinating meats in an aromatic blend of spices (pimento, cinnamon, nutmeg...etc).

Usually, it also comes with fiery habaneros; for a moment, we considered using the Carolina reaper growing in our backyard, but wisely decided against it. For now, we've kept the spice level down by switching in mild red chillis and adding spring onions to mimic the oomph. That said, if you're feeling up to the challenge, feel free to add in more chillis. You won't regret it.
