A dish inspired by the idyllic Malaysian beach vacations we used to have as kids. Watching local fisherman grill up freshly caught fish drenched in sambal and kecap manis remains one of our best memories. We may not be able to remember the exact beach or restaurant, but that waft of grilled banana leaf and batang (Spanish mackerel) will forever remain seared into our hearts.
