When we used to live in Seoul, every year, during the coldest month of the year, we'd venture 3 hours out of the city to a little place called Hwacheon to go ice-fishing. On our way back, we'd be sure to stop by Chuncheon for their famous ddakgalbi. Juicy chicken thighs, perilla leaves, rice cakes, cabbage.....all smothered in a rich red pepper-based sauce, yum. Did we mention that it is all cooked and crisped in a humongous cast iron pan? Yes....YUM. Even though we can't go this year, we can still try to re-invent the magic by making it into a kit! Now...if only we can also re-create the fried rice that comes after.
