We love our chilis, but once it a while we taste one that significantly changes our world view on chillis. Meet the Aji Amarillo. We first met this burst of sunshine in our adventures in Peru. We were awed by the vibrant color it had, and floored by how floral and fruity a chili could taste. Spicy? A little…. but oh so much more complex. If you could taste a sunshine, this is what it would taste like.

For this stew we doubled down on the theme of sunshine by adding a healthy dose of summer squashes, a coconut base to both cut the spice and enhance the fruity notes, and a handful of garden peas. One spoonful, and we’ll have you grinning ear to ear even on the most overcast of days
